MAM MAM, the brainchild of Singapore’s renowned Chef Sebastian Ng of VENUE by Sebastian (and formerly of Restaurant Ember), offers local-inspired rice bowls unique to our homeland.
Discover Chinese, Malay and Indian cuisines in each of his signature rice bowls, which are flavourful and comforting to the belly.
Each bowl comes with quality Thai jasmine rice, seasonal vegetables, salted vegetables and pan-fried egg rolled with onion and chilli, followed by your choice of meat or fish.
The Signature Spice-Crusted Chicken $9.90 is highly recommended and my favourite too. The chicken leg is richly coated in a sauce made from 16 spices including turmeric and lemongrass. Accompanying the rice bowl are the egg roll, curried vegetables and pickled cucumber to whet your appetite.
Another worthy contender is the Signature 100-hour Duck Confit $14.90, also marinated in a variety of herbs and spices. The green sambal that comes with it is addictive as well.
The Wok-fried sliced Beef with Ginger and Scallion $9.90 reminds me of our Chinese Cai Peng (mixed rice). The sliced beef stole the limelight for its tender, succulent taste.

The four asian rice bowls we had may not be the most visually appealing ‘poke bowls’, but they are all surprisingly well-executed with flavours on point.
